Double Winner . . .

You guessed it . . . Chicken Dinner!

So easy and delicious!  And it comes with a BONUS!!

Grab your:

Slow cooker
Onion
Liquid Smoke (optional)
Roaster Chicken (approx. 5 lbs.)
Favorite Dry Rub (I use Hot & Sweet Rub)

Peel & slice onion and put in bottom of crock. Put a few dashes of liquid smoke on top of the onions, if desired.

Rinse and pat dry whole chicken. Sprinkle 1-2 Tbsp of your favorite dry rub in the cavity and liberally all over outside of chicken.
(I use a Hot & Sweet Rub, which also works out great with my Chicken On A Throne.)

Place in crock, breast side down.

Cook on low for approx. 6 hours.

Remove the chicken for your meal. Store any left over meat in fridge for endless possibilities.

BUT!  Here's the
best part!  Leave onions and juices in crock. Add leftover bones of chicken, 1 or 2 cut up carrots & celery stalks, a few cloves of garlic, a couple bay leaves & thyme sprigs and some salt. Cover with water to one inch from top of crock. Cook again, overnight on low. Strain the next day for incredibly rich, flavorful stock - which can be frozen in various amounts & has more unlimited possibilities.

Pictures to follow!

I've got to get cookin'!  Anyone care to join me?
